Red, White, and Blueberry Breakfast



This is hardly a recipe, but more of a fast, easy, and healthy breakfast idea.  Plus, the colors seem fitting for this week.  Maybe I'm a dummy, but the thought of eating uncooked oats had never occurred to me.  Up until about a month ago, the only time I would ever eat raw oats is while I snitched oatmeal-chocolate-chip cookie dough as I baked 'em up.  My friend, Tiffany, introduced me to the concept of eating uncooked oats with milk and yogurt.  How have I been missing out on this incredibly easy breakfast my whole life!?


As much as I love oatmeal, sometimes I don't like to eat it for breakfast because when I'm hungry I don't have the patience to wait for the water to boil and then wait 5 minutes for the oats to cook and then 10 more so I don't burn my tastebuds off.  And then there is a pan to wash.  Don't get me wrong, I do love oatmeal, but I am lazy.  Somedays, like these last few really hot ones, a light, cool breakfast sounds much more enticing than a hot one.    



Red, White and Blueberry Breakfast

Ingredients:

½ cup lowfat vanilla yogurt
⅛ - ¼ cup old fashioned oats, uncooked
½ banana, sliced
2-3 strawberries, rinsed and sliced
Handful of blueberries, rinsed
Milk to taste

Directions:

Combine yogurt, oats, and fruit in bowl.  Add milk to reach desired consistency.  Stir and allow to sit for 15-30 minutes before eating.

Note: Oats will absorb some milk, add a tad more than you think you’ll want.
